Step 1: Pre-cook potatoes (important)
- Boil or microwave potatoes 8–10 minutes until just tender.
- Drain well.
Step 2: Preheat
- Oven: 200°C (400°F)
OR Grill: medium-high heat
Step 3: Mix ingredients
- In a large bowl, combine:
- Potatoes
- Corn
- Sausage
- Shrimp
- Add olive oil/butter, garlic, paprika, Old Bay, pepper, salt, and lemon juice.
- Toss until everything is well coated.
Step 4: Assemble foil packs
- Tear 4 large sheets of heavy-duty foil.
- Divide mixture evenly in the center of each.
- Fold foil tightly to seal.
Step 5: Cook
- Oven: Bake 25–30 minutes
- Grill: Cook 12–15 minutes per side, turning once
- Packs are done when shrimp are pink and potatoes are tender.
Step 6: Finish & serve
- Carefully open foil (hot steam!).
- Sprinkle with parsley.
- Serve with lemon wedges or melted butter 😋
