Step 1: Make the dough

  • In a bowl, mix masa harina and salt.
  • Slowly add warm water.
  • Knead until you get a soft, smooth dough (like playdough).
  • Cover and rest 10 minutes.

Step 2: Prepare filling

  • Make sure fillings are cool and not watery.
  • Mix cheese, beans, and pork if making revueltas.

Step 3: Shape

  • Lightly oil your hands.
  • Take a ball of dough (about golf-ball size).
  • Flatten into a thick disc.
  • Add 1–2 tablespoons filling in the center.

Step 4: Seal

  • Carefully fold dough over the filling.
  • Pinch closed to seal completely.
  • Gently flatten into a thick pancake (about ½ inch thick).

Step 5: Cook

  • Heat a skillet or griddle over medium heat.
  • Lightly oil the surface.
  • Cook pupusas 3–4 minutes per side until golden with dark spots.

Step 6: Serve hot

  • Serve immediately while cheese is melty 😍

  • 2 cups shredded cabbage

  2. Add vinegar, salt, oregano.
  3. Rest 30 minutes before serving.
