1️⃣ Prepare the Dough
- In a bowl, mix masa harina and salt.
- Gradually add warm water while mixing.
- Knead 2–3 minutes until soft, smooth, and pliable (playdough texture).
- Cover and rest 10 minutes (this prevents cracking).
2️⃣ Prepare the Filling
- Ensure all fillings are cool and thick (no excess moisture).
- If making revueltas, mix cheese, beans, and pork evenly.
3️⃣ Shape the Pupusas
- Lightly oil your hands.
- Divide dough into golf-ball–size portions.
- Flatten one portion into a thick disc.
- Add 1–2 tablespoons filling in the center.
4️⃣ Seal & Flatten
- Gently fold dough over filling, sealing completely.
- Roll lightly into a ball, then flatten to about ½ inch thick.
- Smooth any cracks with damp fingers.
5️⃣ Cook
- Heat a skillet or griddle over medium heat.
- Lightly oil the surface.
- Cook pupusas 3–4 minutes per side until golden with dark toasted spots.
- Do not press while cooking — let them puff naturally.
6️⃣ Serve Immediately
- Serve hot while the cheese is perfectly melted.
