Ingredients (Serves 3–4)
- 3 ripe tomatoes, cut into wedges
- 1 large cucumber, sliced
- ½ red onion, thinly sliced
- ½ cup Kalamata olives (or black olives)
- 4 oz (120 g) feta cheese, cut into blocks or large crumbles
Dressing
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon red wine vinegar
- ½ teaspoon dried oregano
