Naturally Sweet & Tangy – No Preservatives
This recipe makes crisp, vibrant pickled beets that are naturally sweet, lightly tangy, and perfect for salads, bowls, or as a healthy snack.
🧺 Ingredients
- 4 medium beets (red or golden)
- 1 cup apple cider vinegar (or white vinegar)
- 1 cup water
- 1 tablespoon raw honey or maple syrup (optional but recommended)
- ½ teaspoon sea salt
- ½ teaspoon whole black peppercorns
- 1 small bay leaf
- 1 small garlic clove (optional)
- Optional flavor boosters:
- A few slices of fresh ginger
- Dill sprigs
- Orange peel strip (very thin)
🥣 Step 1: Cook the Beets
- Wash the beets thoroughly and trim the stems.
- Place them in a pot and cover with water.
- Bring to a boil, then simmer for 30–40 minutes until fork-tender.
- Drain and let cool slightly.
- Peel the skins (they should slide off easily).
- Slice or cube the beets as desired.
